This box includes everything you need to make a 4-course Thanksgiving meal for 4 people, namely:
- 1st course: Country terrine and homemade croutons
- 180g of Quebec pork country terrine
- 130g of homemade croutons
- 2nd course: Minestrone soup with locally harvested seasonal vegetables
- 750ml of minestrone soup made from local harvests
- 1 artisan baguette
- 3rd course: Cranberry-stuffed turkey roast, Dauphinois gratin, and pepper and cognac sauce
- 1 cranberry-stuffed turkey roast
- 700g of Dauphinois gratin
- 285ml of pepper and cognac sauce
- 1l of poultry stock
- 4th course: Quebec apple crisp
- 1 homemade Quebec apple crisp
- PORK EXTRA: 750ml of homemade meatball stew
- DESSERT EXTRA: Homemade fudge for 2
- SYRUP EXTRA: A "can" of Quebec maple syrup
Cooking Instructions
- 1st COURSE: Serve the terrine with the croutons
- 2nd COURSE: Reheat the soup in a saucepan over medium heat. Serve with the baguette.
- 3rd COURSE: Preheat the oven to 325°F and place the rack at the bottom of the oven.
- OPTIONAL: Roughly chop some available fruits or vegetables (apples, pears, carrots, onion, celery, fennel...).
- Generously brush the roast with butter or olive oil, salt and pepper. Add the fruits and/or vegetables to the bottom of an ovenproof dish, pour in the poultry stock and place the roast on top. Bake for 1h30, covered. Baste every 20 minutes.
- Remove the film from the gratin and place it in the oven with the roast. Continue cooking the roast uncovered for 25-35 minutes until a thermometer inserted into the center reads 74°C (165°F), or until the meat is no longer pink.
- Remove the gratin and roast from the oven and place the crisp inside, reheat for 15 minutes.
- Let the roast rest for 5 minutes before slicing.
- Reheat the sauce in a saucepan over low heat.
- Divide the gratin and fruits/vegetables onto plates, place the sliced roast on top and drizzle with pepper sauce.
- 4th COURSE: Serve the hot crisp with a scoop of ice cream (optional) and a drizzle of maple syrup (optional).
- PORK EXTRA: Reheat the meatball stew in a small saucepan over medium heat or in the microwave. Serve with the turkey roast.
