This box includes everything you need to prepare a 3-course holiday meal for 8 people, including:
- 1st Course: Foie gras torchon, wild boar terrine, and smoked lobster and crab rillettes.
- 180g foie gras torchon
- 285ml port onion compote
- 360g pork and wild boar terrine with figs
- 200g pork and duck rillettes
- 120g Atkins smoked lobster rillettes
- 120g Atkins smoked crab rillettes
- 260g homemade croutons
- 2 baguettes
- 2nd Course: Stuffed Quebec grain capon, Dauphinoise gratin, and pepper and cognac sauce
- 1 Quebec grain capon
- 1kg chestnut stuffing
- 1400g gratin Dauphinoise
- 420ml pepper and cognac sauce
- 1L poultry stock
- 3rd Course: Pecan pie and sugar and cranberry pie
- 1 sugar and cranberry pie and 1 pecan pie
Cooking Instructions
- 1st COURSE: Serve the torchon, terrine, and rillettes with the croutons, bread, and onion compote.
- 2nd COURSE: Remove the capon from the fridge 2 hours before cooking. Preheat the oven to 150°C / 300°F and place the rack on the bottom of the oven.
- OPTIONAL: Roughly chop some available fruits or vegetables (apples, pears, carrots, onion, celery, fennel...).
- Stuff the capon and generously brush the skin with butter or olive oil, salt, and pepper. Add the fruits and/or vegetables to the bottom of an oven-safe dish, pour in the poultry stock, and place the capon on top. Bake for 2h30, covered. Baste every 30 minutes.
- Remove the film from the gratin. Place the gratin in the oven with the capon. Continue cooking the capon for 25-35 minutes uncovered until a thermometer inserted in the center reads 74°C (165°F), or the meat is no longer pink.
- Remove the gratin and capon from the oven and place the pie/pudding inside, reheat for 15 minutes.
- Let the capon rest for 5 minutes before carving.
- Reheat the sauce in a saucepan over low heat.
- Divide the gratin and fruits/vegetables onto plates, place the slices of capon on top, and drizzle with pepper sauce.
- 3rd COURSE: Serve the warm pie/pudding with a scoop of ice cream (optional) and a drizzle of maple syrup (optional).
