This box includes everything you need to prepare a 4-course holiday meal for 4 people, namely:
- 1st course: Homemade foie gras torchon and port onion compote
- 180g foie gras torchon
- 285ml port onion compote
- 130g homemade croutons
- 1 Le Versant white wine
- 2nd course: Vegetable minestrone soup
- 700ml minestrone soup from local harvests
- 1 artisan baguette
- 3rd course: Stuffed turkey roast, tourtière, gratin Dauphinois, and cranberry sauce
- 1 cranberry-stuffed turkey roast
- 1 homemade tourtière
- 700g gratin Dauphinois
- 285ml cranberry sauce
- 1L poultry stock
- 4th course: Pecan pie
- 1 pecan pie
Cooking Instructions
- 1st COURSE: Serve the torchon with the croutons and onion compote
- 2nd COURSE: Reheat the soup in a saucepan over medium heat. Serve with the baguette.
- 3rd COURSE: Preheat the oven to 325°F and place the rack at the bottom of the oven.
- OPTIONAL: Roughly chop some available fruits or vegetables (apples, pears, carrots, onion, celery, fennel...).
- Generously brush the roast with butter or olive oil, season with salt and pepper. Add the fruits and/or vegetables to the bottom of an oven-safe dish, pour in the poultry stock, and place the roast on top. Bake for 1h30, covered. Baste every 20 minutes.
- Remove the film from the gratin. Place the gratin and tourtière in the oven with the roast. Continue cooking the roast for 25-35 minutes uncovered until a thermometer inserted into the center reads 74°C (165°F), or until the meat is no longer pink.
- Remove the gratin, tourtière, and roast from the oven and place the pie in, warming for 15 minutes.
- Let the roast rest for 5 minutes before slicing.
- Reheat the sauce in a saucepan over low heat.
- Divide the gratin and fruits/vegetables onto plates, place the sliced roast on top, and drizzle with pepper sauce. Add a slice of tourtière.
- 4th COURSE: Serve the warm pie with a scoop of ice cream (optional) and a drizzle of maple syrup (optional).
